Purpose

Extend oil life and prevent flavor transfer with a documented weekly fryer deep clean.

Run this fryer cleaning SOP during a scheduled weekly boil-out, not the daily oil filter pass. Cool the fryer, follow chemical manufacturer instructions, and test temperature before the first fry.

Prep & Safety

Cool fryer and set up safe work area.
