What's inside

A kitchen SOP set covers six jobs. The sheet on this page is the opening SOP. The other five are separate checklists you download the same way, with no account.

  • Daily opening and closing
  • Handwashing and hygiene
  • Temperature logs
  • Cleaning schedule
  • Corrective actions when a reading fails
  • Sign-off lines for the shift

Sample kitchen SOP (format you can copy)

Review against your local health code before use. Cold-holding temperatures follow the FDA Food Code . Your jurisdiction may differ.

Sample: Kitchen opening

SOP title Kitchen opening
Purpose Confirm equipment, cold holding, and the line are ready before the first ticket
Applies to Opening cook and kitchen manager, every service day
Owner Kitchen manager
Review date Every six months, or after a failed inspection

Steps

  1. Turn on the hoods, then start fryers and the grill or flat top.
  2. Record walk-in and prep-cooler temperatures before food comes out.
  3. Check date labels on prepped food. Discard anything past its date.
  4. Set a sanitizer bucket, towels, and gloves at each station.
  5. Confirm each hand sink has soap, paper towels, and warm water.
  6. Note the 86 list and allergens, then sign the sheet before the first ticket.

Write the temperatures on the sheet. A checkmark with no number does not help the next shift or an inspector.

Temperatures to record

  • Cold food at or below 41°F (5°C)
  • Hot holding, once food is up, at or above 135°F (57°C)

Corrective action

If a cooler reads above 41°F (5°C), do not serve the food in it. Move the food to a working cooler or discard it, write the reading, and tell the manager before service starts.

How to customize it

Open the Kitchen Opening Checklist , then edit the steps, temperatures, and equipment names so they match your line. Download the PDF and post it where the opener stands. Run it for 14 days with manager initials before you add the next SOP.

Kitchen SOP format explained

Every kitchen SOP, including this opening sheet, needs the same six parts.

  • Purpose. Why the task exists, in one sentence.
  • Scope. Who does it, and on which shift.
  • Steps. The actions in the order the opener actually walks the line.
  • Measurable fields. The numbers someone writes down, such as a cooler temperature.
  • Corrective action. What to do when a number is out of range, before service continues.
  • Sign-off. Date, shift, and initials. Unsigned paper is a blank page.

The restaurant SOP format guide walks through layout for the rest of the building.

Frequently asked questions

What should a kitchen SOP include?

A kitchen SOP should include a purpose, who it applies to, the steps in order, measurable fields such as a temperature or a time, a corrective action when a reading fails, and a sign-off with the date and initials. Opening, handwashing, cold-holding logs, and cleaning each need a separate sheet. Inspectors ask for the number, the time, and a name. A poster with no blanks does not answer that. Start with those four. Add dishwashing and receiving once the daily sheets are signed every shift.

How many kitchen SOPs do I need?

Most independent kitchens can run on six to ten SOPs. You do not need a binder that nobody opens. Start with handwashing, the opening checklist, a refrigerator temperature log, and a cleaning schedule. Add the dishwasher SOP, food receiving, and a closing checklist after the first four are signed every shift for two weeks. Hotels and ghost kitchens add outlet or platform steps on top of that set. Unsigned paper fails inspection more often than a short list that the line actually uses.

Is the kitchen SOP template free?

Yes. Open the Kitchen Opening Checklist, change the steps and temperatures, and download a print-ready PDF. You do not need an account. The handwashing, cleaning, dishwasher, and temperature-log templates linked on this page work the same way. SOP Chef does not ask for an email before you print. The form at the bottom of this page is only for the phone app, which is separate from the free PDFs.

Is there a Spanish version of these kitchen SOPs?

The printable checklists linked from this page are available in Spanish as well as English. Open the Kitchen Opening Checklist, or any other template, and switch the language on that page. The Spanish sheet uses the same steps, temperature fields, and sign-off lines. This overview page is in English. Use the language your opening crew actually reads, and post that version at the station.

How do I customize the kitchen SOP?

Open the Kitchen Opening Checklist and edit the equipment names, temperature limits, and steps so they match your line. Add a station you have. Remove one you do not. Then download the PDF and post it where the opener stands. Run it for 14 days with manager initials before you add the next SOP. A sheet that still says fryer, in a kitchen with no fryer, gets skipped on the first morning.

The templates stay free. The app adds daily checklists with staff sign-off, cert expiry reminders, and inspector-ready PDF logs. It works offline, in English and Spanish.
