Restaurant Food Safety

A restaurant food safety policy is the written rule for how this kitchen holds, stores, and handles food. Food safety management is the daily record that the rule was followed: temperatures logged, storage checked, and hygiene signed off. Complete this checklist at least once per service day. The FDA Food Code 2022 holds time/temperature control for safety food at 135°F (57°C) or above when hot, and at 41°F (5°C) or below when cold. Some local health codes still require 140°F (60°C) for hot holding. Use the stricter number your inspector enforces, and correct failures before service continues.
